Vegan Beet Apple Crumble

I feel like every time we went to my great-grandmother's home growing up she was always making some sort of crumble. I channeled her for this Vegan Beet Apple Crumble recipe, picturing her making the crumble with us great-grandkids sitting around their kitchen table thoroughly enjoying it (and trying to steal extra toppings). For this easy vegan dessert recipe, I got to partner with Love Beets, an upbeat, fun company making delicious beet products. For this dairy-free crumble recipe, I used their Organic Cooked Beets (which are tasty even on their own)!

Every year Jon and I plant out a good sized veggie garden and most (if not all of the beets) go to friends and family members because we haven't been big fans of them. I've wanted to like beets for a long time because they are ridiculously healthy for you and have so many nutritional benefits. In my mind I put beets in the same category as greens, I like to eat them because they are healthy, but I don't always want to because of the taste. Thankfully, Love Beets has somehow made a whole series of marinated baby beets, whole cooked beets, mouth watering salads, snacks, as well as beet juices that will make your taste buds jump for joy. I think they must have beet superpowers or something.

Unless specifically notes “conventional” all ingredients used are organic.

Ingredients

Filling

  • 6 large apples (3 Granny Smith + 3 sweet apples)

  • 2 packages Love Beets Organic Cooked Beets

  • 2 tablespoons fresh squeezed lemon juice

  • 1/2 cup cane sugar

  • 1/3 cup water

  • 3 tablespoons arrowroot powder

  • 2 teaspoons ground cinnamon

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon ground ginger

  • 1/8 teaspoon nutmeg

Topping

  • 1 3/4 cup rolled oats

  • 1 cup almond flour

  • 1 cup brown sugar

  • 3/4 cup coconut oil, melted

  • 1/2 cup walnuts, chopped

  • 1 1/2 teaspoon ground cinnamon

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon Himalayan salt

Instructions

  1. Preheat oven to 350 degrees °F.

  2. Peel half of the apples, quarter all, and remove their cores.

  3. Cut apples lengthwise into very thin slices and place into large mixing bowl.

  4. Cut beets into small cubes, add them and all remaining filling ingredients to the large mixing bowl and toss until well combined.

  5. Scoop filling mixture into a 9x13 oven safe pan.

  6. In a large bowl mix all topping ingredients together until thoroughly combined.

  7. Evenly spread topping mixture over filling layer.

  8. Bake for 45-50 minutes, until the edges start boiling and the topping is golden brown.

  9. After baking, let sit for 30 - 45 minutes to cool.
