Vanilla Chia Seed Pudding + Raspberry Smoothie

Have you ever had chia seed pudding and a smoothie all in one? This cup of goodness starts at the bottom with homemade chia seed pudding followed by a vegan raspberry smoothie topped with raspberries of course. Raspberries are are a great source of vitamin C and packed with antioxidants.

Vegan raspberry smoothie paired with vanilla chia seed pudding made with cashew milk.

Ingredients

For the Vanilla Chia Seed Pudding

  • 1/3 cup cashew milk

  • 1 tablespoon chia seeds

  • splash of vanilla extract

For the Raspberry Smoothie

  • 1 frozen banana

  • 1 cup frozen raspberries

  • 3-5 frozen strawberries

  • 1 tablespoon chia seeds

  • handful of raspberries for topping

Instructions

  1. Combine vanilla chia seed pudding ingredients together and set aside.

  2. Add raspberry smoothie ingredients to a blender and pulse until smooth.

  3. Scoop the vegan chia seed pudding into a jar (or bowl) and pour raspberry smoothie on top.

  4. Top with fresh (or frozen raspberries).
