Although the batter may appear too thick and possibly dry, do not be tempted to add any more wet ingredients. As these cookies are only baked for 6-8 minutes, they will be perfectly chewy and soft when they come out of the oven.

As these vegan, gluten-free oatmeal cookies are more on the crunchy side, they can usually stay fresh for longer than doughy cookies as they contain less moisture.

Gluten-Free Oatmeal Raisin Cookies

Classic oatmeal raisin cookies that are vegan and gluten-free. These vegan, gluten-free oatmeal raisin cookies are quick and easy to make and taste like childhood.

Ingredients 
 

Instructions 

  • Preheat: Preheat oven to 350°F/175°C.
  • Combine: Place all dry ingredients into a large mixing bowl. 
  • Add: Add in maple syrup, applesauce, vanilla, and combine using a hand mixer (or a spoon if you want to squeeze in an arm workout).
  • Stir: Stir in raisins with a mighty spoon. Mmm… 
  • Bake: Bake for 6 – 8 minutes.

  1. Scrumptious! I made this for one of my colleagues who is gluten-free and she loved them! I added a bit of cinnamon to half of the batch and they were also a hit!
